Cold Turkey Mango Salad Recipe

Not sure what to do with your Christmas day leftovers? Get creative and repurpose them into a salad!

We love this salad as it makes the most of fresh summer ingredients and is super easy to whip up – it’s the perfect fresh addition for boxing day and the lead up to New Year.

Cold Turkey Mango Salad

Here are the simple steps and all important nutrition information:

Serves:

  • 4 people

Per serve:

  • 1900kJ (454cal)
  • 33g Carbohydrate
  • 42g Protein

Ingredients:

  • 2 tbsp rice vinegar
  • 1 tbsp caster sugar
  • 1 red chilli (remove seeds, chop finely)
  • Leftover turkey meat (or meat of choice)
  • ½ cup chopped coriander
  • ½ cup chopped mint
  • 1 packet baby spinach leaves
  • 1-2 ripe mangoes (peeled and sliced)
  • 1 ripe avocado (sliced)
  • Dressing:
    • 150mL honey
    • ¼ cup rice vinegar
    • 50mL garlic infused olive oil
    • 2 tsp sesame oil

Method:

  • Mix vinegar, sugar and chilli in a small bowl and stir until sugar has dissolved
  • Soak leftover turkey in the chilli mixture and set aside
  • Mix dressing ingredients together (you may need to blend this to combine the honey!)
  • Assemble the salad and serve
