Pearl Couscous Salad with Spiced Chicken Recipe

Why not give this delicious salad a try – our Dietitian’s swear by it. Pearl and couscous salad is super tasty and provides a fantastic dose of fibre which is great for your gut health and critical to helping keep you fuller for longer over the day.

Serves:

1 serve

Macronutrients: 

  • Calories: 550
  • Carbohydrates: 63.5g
  • Protein: 36.2g
  • Fats: 17g
  • Fibre: 12.7g

Ingredients: 

  • 1 medium cauliflower (~1.5kg) cut into florets
  • 1 tbsp olive oil
  • 2 tbsp lemon juice
  • 3/4 cup (150g pearl cous cous)
  • 1 sachet taco seasoning
  • 1.5 cups chicken or veggie stock (salt reduced)
  • 2 chicken breast fillets
  • 2/3 cup Greek yoghurt (i.e plain low fat Chobani)
  • 1 lebanese cucumber (diced)
  • 1 cup fresh mint leaves
  • ½ cup flat leaf parsley
  • 400g canned chickpeas (drained and rinsed)
  • 80g Olives (1/2 cup) (pitted and halved)
  • 60g rocket or spinach
  • 1/4 flaked almonds (toasted)

Optional – add ½ cup pomegranate seeds for an extra flavour boost and hit of Vitamin C

Method:

  1. Preheat oven to 200C.
  2. Place the cauliflower florets into a large bowl and drizzle 1 tsp of the olive oil and 2 tsp’s of the taco seasoning. Mix and the arrange over the lined tray and place in the oven. Bake for roughly 30mins or until tender and golden.
  3. While the cauliflower is cooking, heat 1 tsp of the olive oil into a pan and another 2 tsps of spice mix then add the couscous and the stock. Bring to a boil and then reduce heat to a simmer and cover for 10mins until the liquid is absorbed. Once cooked, set aside to rest.
  4. Coat the chicken in the remaining olive oil and seasoning. Cook on a fry pan until chicken cooked through ~5mins each side.
  5. Combine the yoghurt and lemon juice with a pinch of salt for the dressing.
  6. Place the cauliflower, couscous, chickpeas, olives, parsley, rocket, cucumber and thinly sliced chicken into a large salad bowl, drizzle dressing on top and combine.
  7. Sprinkle salad with almonds and the pomegranate if desired and enjoy!!
