Zucchini, Sweet Potato and Spinach Loaf Recipe

This month we have a great tasting and filling way to pack in some extra vegetables and fibre to your diet – especially great for kids or as a breakfast option where vegetables are often lacking.

Why we love it is that apart from being delicious, it can also be eaten like bread and covered with whatever toppings you choose. This makes it a great and creative way to increase your protein intake – by adding something like an egg, cheese or smoked salmon.

Easy to make and can be frozen and reheated in the microwave for a fast, grab and go option.

So, how do you make this great zucchini, sweet potato and spinach loaf by our resident Dietitian Maddy Eager:

Serves:

  • Approximately 10 slices

Per serve:

  • 750kJ
  • 9.5g Protein
  • 15g Carbohydrate

Ingredients:

  • 1 brown onion diced

  • 1 tbsp olive oil

  • ½ cup pepitas

  • Juice and zest of 1 lemon

  • 1 tsp dijon mustard

  • 5 free range eggs

  • 1 ½ cups wholemeal self raising flour

  • 2 grated zucchinis

  • 1 small sweet potato grated

  • 1 cup packed spinach leaves

  • ½ cup light tasty cheese (grated)

  • ¼ cup coriander

  • 1 tsp sea salt

  • Cracked pepper

Method:

  • Preheat oven to 180 degrees fan forced

  • Place a pan on medium heat. Add olive oil and onion to pan and cook until caramelised/translucent (approx 10 minutes)

  • Grate the zucchini and sweet potato. Squeeze to remove excess liquid

  • Slice spinach into small pieces

  • Whisk eggs and dijon mustard until mixed. Add zucchini, sweet potato, spinach, flour, cheese, pepitas, coriander, salt, pepper and flour. Mix until combined

  • Add lemon zest and juice, mix until combined

  • Transfer mixture into a lined loaf pan or baking dish

  • Bake for 45 minutes or until a skewer comes out clean when inserted into the centre of the loaf

  • Allow the loaf to cool then slice and serve
