Berry Bircher Muesli

This recipe is a great energy booster and wonderful source of vitamins and minerals.

The oats and dried apricots provide iron, the milk, yoghurt & chia seeds provide a good source of calcium and manganese, the almonds and pepitas provide a good source of vitamin E and zinc and the berries provide a fantastic source of vitamin C and anthocyanins.

It’s also delicious and easy to make!

Nutritional Information

This recipe serves 2 and per serve provides:

  • Calories= 570cals
  • Kilojoules= 2386Kj
  • Protein= 27g
  • Carbs= 52g
  • Fat= 24g
  • Fibre= 15g

Ingredients

  • 1 Cup Rolled Oats (90g)
  • 1 Cup Berries (can be frozen or fresh)
  • 2 tablespoons Chia Seeds
  • ½ Cup Low Fat Milk (or Milk Alternative – ensure that it is fortified with calcium)
  • 170g Low Fat Greek Yoghurt (i.e Chobani)
  • ¼ Cup Sliced Almonds
  • ¼ Cup Pepitas
  • 1/3 Cup Diced Dried Apricots
  • Drizzle of honey (if desired on top)

Method

Step 1: Mix all ingredients in a bowl (we like to leave half the nut/seed mixture aside), and leave to set overnight in the fridge.

Step 2: Remove from fridge, add remaining nuts/seeds on top and drizzle with honey.
