Beef Stir Fry Recipe

Needing a new dinner recipe? Why not give this delicious beef stir fry a try. The stir fry is packed full of protein, iron, vitamin C and vitamin K.

Did you know that Iron is an important dietary mineral that is involved in various bodily functions, including the transport of oxygen in the blood?

Vitamin C helps your body absorb iron, therefore it is beneficial to include sources of vitamin C in your meals. Vitamin C is high in citrus fruits (oranges, lemon etc) but it is also high in broccoli and bok choy.

Serves:

4 people

Macronutrients: 

Per Serve (calculated using cashews and ½ cup rice per serve)

  • Calories: 612
  • Carbohydrates: 56g
  • Protein: 49g
  • Fats: 20g
  • Fibre: 6g

Ingredients: 

  • 500 grams of rump beef steak (chopped into strips or chunks)
  • 2 garlic cloves crushed
  • 2 spring onions diced
  • 1 thumb-sized piece of ginger grated or 1 tsp ginger paste
  • 1 bunch of bok choy (chopped)
  • 1 head of broccoli (chopped)
  • 4 shitake mushrooms
  • 1 cup snow peas (topped and tailed)
  • 1 carrot (diced)
  • 2 tbs of soy sauce
  • 2 tbs of fish sauce
  • 1 tbs of honey
  • 1 tsp chilli paste (optional)
  • 2 tbs of sesame oil
  • 4 tbs of slivered almonds or whole cashews
  • 1 cup basmati rice (raw) then cooked

Method:

  1. Add 1 cup of basmati rice into a saucepan with 2 cups of water, put on a high heat until bubbling and then turn down low to a simmer and place the saucepan lid on. Keep checking on your rice and stir with a fork. Usually takes ~12minutes until you get cooked fluffy rice
  2. While the rice is cooking, heat a pan and put the sesame oil in
  3. Brown the outside of the diced rump and remove from heat
  4. Add in the garlic, ginger, chilli and spring onions and heat until softened
  5. Add in all the veggies and the sauces and honey and add in a few tbs of water. Cover with a lid and cook on high for 5 minutes
  6. Remove lid, add the meat back in and cook to combine for a few more minutes
  7. Add in the nuts and toss
